Ingredients

  • Medium rutabagas (2), chopped and peeled into sizable chunks
  • Olive oil, divided (6 tablespoons)
  • Black pepper + salt (so that we can season our soup to taste)
  • Butter (2 tablespoons)
  • Onions (2), chopped finely
  • Celery (2 stalks), chopped finely
  • Carrots (2 large size), finely peeled and chopped
  • Ground nutmeg (1/4 tablespoon)
  • Hot vegetable stock (6 cups)
  • Heavy cream (1 cup)
  • Garnish (finely chopped parsley, this choice is optional)

Cooking Instructions

  1. To get started, you will need to preheat your oven. For best results, you should be setting the oven to 400 degrees Fahrenheit (thus temperature will be 200 degrees if you are a Celsius household).
  2. From there, the large rutabaga chunks that you have already cut up are placed onto a baking sheet of your choosing. Take the olive oil and drizzle 4 tablespoons’ worth onto the rutabaga. Once this step is complete, this is when you will grab your salt and pepper. It’s time to season the rutabaga to taste. Take the rutabaga and roast it for at least 35 to 45 minutes.
