A Deliciously Tasty Gazpacho Soup Recipe
Gazpacho is a popular tomato based soup, that is traditionally served cold. The delicious soup originated in the Andalusia region of Spain, after tomatoes and sweet peppers were brought from the new world in the 16th century.
The Spanish people usually served gazpacho as a midday meal to get some relief from the hot Mediterranean sun, as well as to regain some energy. As with most tasty soups, it wasn’t long before gazpacho was unveiled to the rest of the world, and became extremely popular in the United States.
We love it so much, that we designated December 6th of each year as National Gazpacho Day. Through the years, many variations of this refreshing soup have popped up including fruit based versions that use strawberries, watermelon, and grapes. A Deliciously Tasty Gazpacho Soup Recipe

Ingredients
- 6 whole tomatoes (peeled, chopped, and seeded)
- 1-1/2 English cucumbers
- 1/4 cup of olive oil
- 1 cup of chopped red or orange bell pepper
- 1/2 cup of red onion, diced
- 2 large garlic cloves, minced
- 1 tablespoon of jalapeño pepper, minced
- 1/4 cup of fresh cilantro, finely chopped
- 1 lime, juiced
- 1 tablespoon of Worcestershire sauce
- 4 cups of low sodium tomato juice
- 1/4 cup of white wine vinegar (apple cider vinegar can also be used)
- 1 teaspoon of sea salt
- 1 tablespoon of fresh ground pepper
Directions
1. In a large glass bowl (plastic will stain), mix the olive oil, tomatoes, cucumbers, bell peppers, garlic, cilantro, onion, and jalapeño.
2. Add in the vinegar, tomato juice, lime juice, Worcestershire sauce, and stir all ingredients until well blended.
3. Season with the salt and pepper, taste and adjust accordingly.
4. If the gazpacho is too chunky, feel free to take half the portion and purée it in a food processor or blender. Then mix back into to bowl.
5. Cover and chill in the fridge for an hour before serving.
Tips
- Make sure to use the ripest of tomatoes.
- Remove the skin by parboiling them for about 30 seconds, then submerging them in ice-cold water to cool for easy peeling.
- The longer the gazpacho is allowed to chill, the more flavorful it will be.

Is It Ok To Freeze Gazpacho?
It’s more than ok to freeze this chilled soup. It’s actually one of best soups to save in the old ice box. There’s carbs it grains that will break down and become gritty. It has no milk or cream that will clump or chunk. The best part is, the longer the ingredients co-habitat, the more flavor your soup will have.
Gazpacho will last a good 6 months in the freezer. Just be sure to store them in freezer safe containers. It’s preferable to use glass containers or bags, because that tomato purée is tough on plastic. But if you don’t mind stains, it’s fine.
