- 1 can of whole kernel corn (drained)
- 1 – 14 ounce can of Mexican-style stewed tomatoes (do not drain)
- 1 – 14 ounce can of diced tomatoes (do not drain)
- 1 – 14 ounce can of tomatoes and green chilies (do not drain)
- 2 – 4 ounce cans of diced green chilies
- 1 – 4 ounce can of black olives, sliced
- 1/2 cup of green olives, sliced
- 1 package of taco seasoning mix
- 1 package of ranch dressing mix
Garnish
- corn chips or taco shell pieces
- sour cream
- green onion
- sliced jalapeños
- shredded cheddar cheese
Directions
- 1. Brown the ground beef and the onions in a large skillet. Drain off any excess juice and fat. Place it in a large stockpot.
- 2. Add the beef broth, beans, corn, tomatoes, chilies, black olives, green olives, taco seasoning, and ranch dressing mix.
- 3. Simmer over a low heat for about 1 hour. Stir occasionally.
- 4. Place the corn chips or taco shell pieces in the soup bowls and ladle the soup into them.
