Ingredients
- Scallions (6)
- Garlic cloves (4, minced)
- Freshly grated ginger (1 tablespoon)
- Vegetable oil (1 tablespoon or 15 mL)
- Sliced mushrooms (1 8-ounce package or 226 grams)
- Veggie broth (4 cups or 950 mL)
- Kimchi Hot Sauce (2 tablespoons or 30 grams)
- Daikon radish (1 medium, peeled and sliced into ¼ inch rounds)
- Lucky Foods Seoul Original Kimchi (1 cup or 150 grams)
- Silken tofu (1/2 of a 12-ounce package or 340 grams, sliced into large cubes)
- Soy sauce (use as needed)
Step-by-Step Cooking Instructions
Step 1:
This is when the saute will take place. Once you are ready to get started, it is time to thinly slice up your scallions. Make sure that the white and the green parts are fully separated. From there, mince your garlic. Make sure that the ginger has been finely grated. Grab a large skillet or pan and heat the oil on a medium setting. Add the white parts of your scallions, ginger, mushrooms and garlic. Cook the mixture, making sure that you are stirring frequently. You will know it is time to head to the next step when the mushrooms have sweated out their moisture and have been soft for roughly 8 minutes.
Step 2:
Now, it is time to simmer your soup. Add your hot sauce, broth and the daikon radish. Bring the soup to a simmer before covering it. Allow it to cook until the radish has had the chance to soften. We prefer a slight softening so that there is a slight crunch. This step is going to take about 10 minutes.
Step 3:
Your deliciously tasty kimchi soup recipe is now served. The tofu and kimchi is stirred into the dish prior to serving. The soy sauce is added as well and the amount that you will use will depend on your tolerance for saltiness. Taste the soup, so that you know exactly how much to add. Ladle the soup into the bowls that it will be served in and add the green parts of the scallions.
