- Medium carrots (3, thinly sliced, roughly 1 cup’s worth)
- Large celery stalks (2, chopped, roughly 1 cup’s worth)
- Large garlic cloves (2, minced, roughly 1 tablespoon)
- Rotisserie chicken (1, with skin and bones discarded, meat shredded, roughly 3 to 4 cups of shredded chicken)
- Lower sodium chicken broth (8 cups)
- Italian seasoning (1 teaspoon)
- Kosher salt (1/2 teaspoon)
- Black pepper (1/4 teaspoon)
- Uncooked wide egg noodles (2 cups)
- Fresh flat-leaf parsley (chopped)
Step by Step Instructions
- Step 1: We will get started by cooking the mirepoix. Once you are ready to get started, it is time to heat your oil. A large Dutch oven is going to be utilized for this task. Make sure that the heat has been set to medium-high. From there, the onion, carrots, celery, and garlic are added to the Dutch oven. Cook the mixture and take the time to stir often. This step will take about 8 minutes or until vegetables have had the chance to soften.
- Step 2: The chicken and broth are now stirred in. In addition to the chicken and broth, you will now also want to stir in the Italian seasoning, salt, and pepper. Add the proper amounts of each, making sure that you are seasoning the soup to your personal taste. Some may prefer less salt and pepper, while others may want as much as possible. Reduce the heat to medium and allow it to gently boil for roughly 6 minutes.
- Step 3: The noodles will be added to the Dutch oven at this time.
