A Deliciously Tasty Beef Fajita Soup Recipe

Ingredients
- 1 pound of boneless top sirloin steak
- 3 tablespoons of olive oil
- 2 cloves of garlic, crushed
- 1 cup of yellow onion, chopped
- 1 cup of chopped bell pepper (red and orange)
- 1 cup of kernel corn
- 1 can of black beans (keep about 1/4 of the juice and add to the soup with the beans)
- 1 teaspoon of chili pepper
- 1/2 teaspoon of paprika
- 1/2 teaspoon of cumin
- 1/2 teaspoon of fresh ground pepper
- 1/2 teaspoon of salt
- 3 cups of beef broth
Garnish/Toppings

- tortilla strips
- cilantro
- shredded cheddar cheese
- avocado
Directions
1. In a large saucepan, heat 2 tablespoons of olive oil over a medium flame. Sauté the peppers, onions, and garlic until aromatic. Stir in the corn, black beans, and spices. Cook for another 6-8 minutes, stirring occasionally. Add the broth and simmer for 15 minutes.
2. While the soup is simmering, heat a tablespoon of olive oil in a pan over a medium heat. Season with salt and pepper. Cook for 4 to 6 minutes per side.
3. Let the steak sit for about 5 minutes before cutting into bite-size pieces. Pour the soup into bowls and add the steak. Top with tortilla strips and your choice of garnish.
