  • 1 tablespoon of paprika
  • 4 tablespoons of low sodium soy sauce
  • 1 teaspoon of caraway seeds
  • 1 teaspoon of fresh pepper
  • 20 ounces of beef stock
  • 3 tablespoons of red wine
  • 1/4 cup of tomato paste
  • water


  1. In a large stockpot, heat 1/2 a cup of water and add the chopped onions. Cook over a high heat until onions are soft, and the water has been soaked up (about 5 minutes). Stir often.
  2. Add 1/4 cup of beef stock and olive oil to the onions, and cook until most of the stock has evaporated, and the onions have browned.
  3. Add the mushrooms, paprika, dill, caraway, and pepper. Stir for about 4 minutes.
  4. Add the rest of the stock, tomato paste, and soy sauce, stir well, and simmer for about 10 minutes, or until mushrooms are tender.
  5. Remove the pot from the heat, and add the red wine. This step is optional.


Feel free to substitute the beef stock for vegetable stock for a vegetarian version. For an even heartier and healthier version, substitute the beef stick for bone broth. Not a dill person? Try some sage or thyme instead.
