- 3 tablespoons of olive oil
- 2 yellow onions, chopped
- 1 pound of sliced mushrooms (white button are suggested, but it’s up to your taste)
- 2 tablespoons of dill
- 1 tablespoon of paprika
- 4 tablespoons of low sodium soy sauce
- 1 teaspoon of caraway seeds
- 1 teaspoon of fresh pepper
- 20 ounces of beef stock
- 3 tablespoons of red wine
- 1/4 cup of tomato paste
- water
Instructions
- In a large stockpot, heat 1/2 a cup of water and add the chopped onions. Cook over a high heat until onions are soft, and the water has been soaked up (about 5 minutes). Stir often.
- Add 1/4 cup of beef stock and olive oil to the onions, and cook until most of the stock has evaporated, and the onions have browned.
- Add the mushrooms, paprika, dill, caraway, and pepper. Stir for about 4 minutes.
- Add the rest of the stock, tomato paste, and soy sauce, stir well, and simmer for about 10 minutes, or until mushrooms are tender.
- Remove the pot from the heat, and add the red wine. This step is optional.
