I’m partial to this soup because it’s relatively easy to throw together and it feels indulgent while being packed full of nutrients. For a filling meal or a side dish, you can’t go wrong with soup. What better way to use that head of cauliflower waiting in your fridge than to make a cozy soup that will warm your body and your soul?

Cream of Cauliflower Soup Recipe

Let’s get started on pulling this delicious cauliflower soup together. It only requires a few basic ingredients and will take less than an hour to throw together.

Ingredients

  • 1 large head of cauliflower, or two smaller heads, cut into small florets
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 sweet onions, chopped
  • 4 cups chicken stock
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 cups sharp cheddar, shredded + extra for garnish
  • 1 cup heavy cream

Instructions

  1. In a large soup pot, heat oil over medium-high heat. When the oil is heated, add the garlic and onions. Cook for around 5 minutes until the garlic is fragrant and the onions are transparent.
  2. When the onions and garlic are ready, add the cauliflower and stock. Be sure to scrape the bottom to make sure the garlic and onion are well incorporated. Bring to a boil and then reduce to medium heat. Simmer for twenty minutes or until the cauliflower is soft when you poke it with a fork.
  3. Remove the soup from the heat. Use an immersion blender or stand blender to blend. If you use an immersion blender, be careful of splatter, the soup will be hot. If you are using a stand blender, you may have to do so in batches, and again, you should be very careful not to get burnt by spillover.
  4. Once the soup is blended smoothly, put it back on the stove over medium heat. Add the salt, pepper, cheese, and heavy cream. Stir until the cheese is melted. Taste the soup and see if you need more salt or pepper.
  5. When the soup is warmed, serve right away. Serve with extra cheese on the top.

For non-meat eaters, veggie stock is a great option. Beef stock will also work nicely. Thus, you shouldn’t worry if you don’t have chicken stock on hand.

This soup uses stock and dairy, so it does have some protein, but some people may want even more dairy based on their nutritional goals. You could add shredded chicken, beef, fish, tofu, or bacon bits depending on your lifestyle and flavor interests.

If you want to store the soup for longer, you can pop it in the freezer. U.S. Food Safety standards suggest that you can freeze food indefinitely, but most frozen foods are best eaten within three months because after that time, while they are still perfectly safe to eat, the soup may lose its rich flavor and won’t taste as good.
