Instructions

  • Turn down to a simmer and allow the chicken to cook for about 15-20 minutes, until fully cooked. Chicken should be tender and able to shred easily.
  • While the chicken is cooking, add half the corn in a blender and pulse a few times with a small amount of water. The goal is to lightly crush it, not completely puree it.
  • Once the chicken is done, remove it from the pot and shred with fork and knife.
  • Once the chicken has been shredded, return it to the pot, along with the crushed corn, and the 2 cups of water. Allow the soup to simmer.
  • While the soup is simmering, combine the flour with a small amount of water to make a slurry and add it to the simmering soup, which will thicken it.
  • Next, beat an egg and slowly add it to the soup.
  • Add salt to taste along with hot sauce, soy sauce, and vinegar as needed. Enjoy!
