- 1 cup of white wine, or if you prefer, use 1 cup of water instead
- 5 cups of chicken broth
- 1/3 cup of cubed parmesan cheese
- 1 tbsp of finely chopped fresh thyme
- 1 tbsp of fresh basil, finely chopped
- 4 bay leaves
- 1/4 tsp of cayenne pepper
- Sea salt, to taste
- Cracked black pepper, to taste
- 2 cups of heavy cream
- 1/2 cup of fresh chopped parsley
- Fined chopped green onion, for garnish (optional)
Cooking Instructions
- Melt the butter in a large pot.
- Add the onion and cook until tender and almost translucent, which should take about 3 minutes or so.
- Add in the leeks and garlic and cook until the onions are completely translucent, which is approximately 2 more minutes.
- Next, add the pureed tomatoes and stir. Add the sugar and black pepper and stir the soup an additional time. Next, you can add in the white wine.
- Bring it to a boil and then reduce the heat, letting simmer for 10 minutes, which is about the time it takes the wine to be reduced. After this time, the liquid will become thick, and the steam will no longer smell of alcohol.
- Pour in the chicken broth. Now add the cubes of parmesan, thyme, basil, bay leaves, cayenne pepper and sea salt. Reduce heat to low, cover and let simmer for about 20 minutes.
- Remove lid. Add in the heavy cream and parsley. Recover and let simmer an additional 10 minutes on low.
