The Recipe

First of all, you will want to round up the ingredients for this amazing copycat version of the Olive Garden Chicken Gnocchi Soup recipe. Be sure to thaw out at least one boneless and skinless chicken breast so you can cook it and cut it into one-half-inch pieces ahead of time.


  • 1 boneless skinless chicken breast, cooked and cut into 1/2-inch pieces
  • 1/4 cup butter
  • 1 small yellow onion that is diced
  • 1 cup shredded carrots
  • 1 cup of thinly sliced celery
  • 4 cloves of minced garlic
  • 1/2 cup all-purpose flour
  • 1 cup heavy cream
  • 5 cups chicken broth
  • 1 16-ounce package of potato gnocchi
  • 1 cup fresh spinach
  • 1 teaspoon fresh thyme
  • Salt and pepper
  • Chives, sliced

The Directions
