The Recipe

- 1 boneless skinless chicken breast, cooked and cut into 1/2-inch pieces
- 1/4 cup butter
- 1 small yellow onion that is diced
- 1 cup shredded carrots
- 1 cup of thinly sliced celery
- 4 cloves of minced garlic
- 1/2 cup all-purpose flour
- 1 cup heavy cream
- 5 cups chicken broth
- 1 16-ounce package of potato gnocchi
- 1 cup fresh spinach
- 1 teaspoon fresh thyme
- Salt and pepper
- Chives, sliced
