  • 1 cup heavy cream
  • 5 cups chicken broth
  • 1 16-ounce package of potato gnocchi
  • 1 cup fresh spinach
  • 1 teaspoon fresh thyme
  • Salt and pepper
  • Chives, sliced

The Directions

As with any recipe, you will want to strictly follow the directions for this copycat version of the Olive Garden chicken ganache soup recipe. As you get used to making this new type of soup, you can eventually add in your own extra spices and touches to cater the recipe to your preferences as well as your family’s taste buds.

Directions

First, you will want to sauté the vegetables for your soup, which includes the onion, carrots, celery, and garlic. It is best if you can use a Dutch oven-style pot and sauté these vegetables on the stove. You can also use a frying pan to achieve this particular step in our delicious recipe. You will first melt the 1/4 cup of butter or margarine in a Dutch oven or on top of the stove before adding the vegetables with a pinch of salt and pepper to sauté them.

Step One

This step will take about eight minutes and you should stir the vegetables up occasionally so they are soft yet will still pack plenty of punch when it comes to the taste of them. This will also keep you from burning the vegetables while you are sauteing. If you do not wish to use butter or margarine, you can always use some type of oil such as avocado or olive oil. While your vegetables are cooking on the stove, you can also heat up the chicken broth stock to the point of simmering in a separate pot on your stove.

Step Two

In the second step, you will be making a roux by adding your flour to your vegetables while they are still in the pot. Just simply add the flour to the vegetables and stir very well for at least one minute. You can then gradually pour in the chicken broth stock that is already at the level of simmering. Be sure to whisk constantly while you are doing this step as the mixture begins to thicken. You want to continue to whisk for about five minutes. You will then add in your cooked chicken that is already cut up into pieces, along with the gnocchi, and let that cook for about another five minutes while you continually stir the mixture.

Step Three

It is now time for step three of the process. You will add in the cream and spinach to the mixture that is still cooking in a pot on your stove or in a Dutch oven. You will want to add in some thyme as well as salt and pepper and any other spices you may want to add while you cook this mixture on medium to low heat.

We will now have the finished product of your copycat Olive Garden Chicken Gnocchi soup that you can serve up with a side of garlic bread and garnish it with pepper and chives for a delicious lunch or dinner. Keep in mind that there are many ways in which you can really make this recipe your own. For instance, you can use olive, avocado, vegetable, or other types of oil or even ghee in place of the butter or margarine when sauteing your vegetables for this amazing soup.

You can also use heavy cream in the mixture to form a roux to make your soup even thicker. You can also use some type of thickener such as cornstarch to also thicken your soup up. Keep in mind, though, that the soup will thicken as it cooks so you can always keep it on the stove longer to thicken it up also.

Tips

If you want to make this whole process move along much faster, you can use a store-bought gnocchi in your recipe which will save you several steps. It may not taste as delicious, but it will be pretty darn close. You can also throw in some frozen spinach or other veggies that you may want to add to change things up over time.

And there you have it. An Olive Garden Gnocchi Soup recipe you can make all your own and serve it up to friends and family with pride.
