Ingredients
- 2 pounds of chicken breast, cut into one-inch squares*
- 8 cups chicken broth
- 2 tablespoons butter
- 2 tablespoons olive oil
- 4 minced garlic cloves
- 2 stalks celery, chopped finely
- 2 carrots, chopped into small pieces
- 1 sweet onion, diced (but other onions can work)
- 3 tablespoons flour
- ½ teaspoon Italian season
- 1 cup orzo, uncooked
- 1 tablespoon lemon juice
- 1 teaspoon salt (or to taste)
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon pepper (or to taste)
*If you prefer, you can brown chicken in a pan first, which I like to do, but this is not necessary. Alternatively, you can choose not to chop the chicken, and you can take it out after cooking it and then shred it with a fork, but I find that method to be a lot of unnecessary fuss.
Instructions
- Chop and prepare your ingredients.
- Heat the butter and oil in a soup pot over medium-high heat. When the oils are heated, add the garlic and onion. Cook until fragrant and translucent for about 3 minutes. Add the carrots and celery. Cook for an additional 5 minutes.
- Add flour. Be sure to stir it so that it doesn’t clump. Cook for a minute or two.
- Pour the chicken broth into the pot and stir until the flour dissolves. Add seasonings and spices. Put the cut-up chicken into the pot.
- Bring the soup to a boil. When the soup is boiling, put a lid on and turn down the heat. Let the soup simmer for around 30 minutes. The chicken should be cooked through, and you should be able to pull it apart with your fork. If it is not flaky, let it simmer longer.
- Add the lemon juice.
- Add the orzo, and let it cook for about 10 minutes or until the orzo is completely cooked. You’ll want to stir often to avoid the orzo sticking at the bottom of your pot.
